Thanksgivings at our house have been reborn in a most wonderful way. Now our holiday meals are mostly vegan (with a few vegetarian offerings). Our holiday table provides an invitation to be fully awake to the abundant gifts of the earth, a time to be truly grateful for family and friends and an occasion to extend human kindness, love and compassion to fellow creatures. Thanksgiving also provides a special time to transform tired traditions into new kitchen inspirations. I was owner and chef at Saint Francis Café and have cooked in a monastery (rectory for priests) for the last 15 years.
